White Chicken Chili
1 yellow onion, chopped
1/4 cup butter
1/4 cup flour
1 to 1 1/2 cups chicken broth
2 cups half and half
2-4 oz can diced green chilies
4 chicken breasts, cooked and diced
( I have used can chicken, shredded)
3-15 oz cans navy beans (Bush's)
( I have used dry and cooked them, too)
1 1/2 cup Monterey Jack cheese, shredded
1/2 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
Brown chopped onion in butter in a large pan, when browned, whisk in flour. Gradually add chicken broth and half and half, simmer until thick, stirring constantly. Add chili powder, cumin, salt and pepper. Add green chilies, chicken and navy beans. Mix together and simmer until heated. Add cheese when ready to serve.
